  1. Take steak from fridge 30 min before cooking to come to room temp.

  2. Heat a cast-iron skillet over high heat until smoking.

  3. Pat steak dry, drizzle oil, season generously.

  4. Sear 3–4 min per side (for medium‑rare, internal temp ~130°F)

  5. Remove, rest 5 min under foil (temp rises ~5°F).

  6. Slice against the grain and serve, optionally topped with herb butter.
